delicious Chewy cookies

OK, I admit. They're not Vegan & they're not Sugar-Free but these cookies are a sure way to win your pals over! They're deliciously chewy, super easy to make taste insane and make for great gifts. Oh and did I say they are almost 100% fail safe in the baking department?

This is a family recipe of mine that has been going strong for the past 20+ years and it is my pleasure to share it with you and your families! 

The qty's are high but this recipe makes around 40 cookies so there will be enough for everyone!

INGREDIENTS

1 Cup of White Sugar (Or sweetener alternative)
1 Cup of Brown Sugar
8 oz Butter
2 Eggs
1 Teaspoon of Vanilla
2 Cups of Flour
1 Teaspoon of Baking powder
1 Teaspoon of Baking Soda
2 Cups of rolled oats
1 Cup of chopped walnuts (Optional)
1 Cup of Chocolate Chips

METHOD:

  1. Preheat your oven to 180 degrees.
  2. Grease 2 baking trays or use re-usable baking mats for cooking
  3. Blend the 2 sugars together and add the softened butter. Cream these together with electric beaters adding in the vanilla.
  4. Continue to beat the mixture and add one egg at a time. Beat this mixture until it is light and fluffy. 
  5. In a separate bowl, mix together the Flour, Baking Powder and Baking Soda. Mix Well and add together with the fluffy butter / sugar mixture.
  6. Finally, add the rolled oats, Chocolate Chips & walnuts (If using) into the mixture. 
  7. Place spoonfuls of the mixture onto a well greased tray. Be sure to leave a large gap in between the spoonfuls as the cookies will flatten and expand!
  8. Bake at 180 degrees for 10-15 minutes. If you like them chewy, take them out earlier... if you like them crunchy, keep them in for the full 15 minutes!

    Enjoy! As I mentioned, these cookies make for great gifts wrapped up in a piece of fabric, scrunched up in some recycled paper or placed in a Jar with a ribbon around the top.
