Creme Egg Rocky Road? I hear you say. Yep, 'tis the season for a little chocolate indulgence and boy have I got the recipe for you. Not only does this Easter treat look impressive but it tastes even better! You can only make this bad boy for one month a year (Thank goodness!) sooo.... You better skip to it! Read on for the recipe & impress your roomies/boyfriend/bestie/family this Easter.
Ingredients for Easter Creme Egg Rocky Road
- 150g Unsalted butter
- 400g Mixed Milk/Dark chocolate chopped
- 2 Tablespoons Golden or Maple syrup
- 180g of Mini Creme Eggs unwrapped (Could also use Caramel eggs)
- 180g of Mini marshmallows
- 150g Digestive or Wine biscuits crushed into chunks
- 150g White chocolate chopped
- 8 Creme Eggs full size, unwrapped (Could also use Caramel eggs!)
Instructions to make Easter Creme Egg Rocky Road

Place the butter in a large pan and start to melt it over a low heat.

When the butter is half melted, add the dark & milk chocolate & Golden Syrup. Over a very low heat, continue to melt it all. Stir until it's thick and well combined.

Remove from the heat and set aside for 10 minutes until it's cooled slightly.

Add the mini Creme Eggs, the marshmallows and the digestive biscuits, stir until everything is well coated.

Line a 20cm x 20cm baking tin with baking paper and press the mixture firmly in.

Meanwhile melt the white chocolate in a bowl over a saucepan of steaming water. Make sure you keep the temperature very low as white chocolate can seize easily.

Drizzle the white chocolate over the rocky road, crush or smash the full size Creme Eggs and sprinkle on the top pressing them into the chocolate firmly.

Allow to set in the fridge for at least a couple of hours.

Turn out of the tin and cut into small chunks using a very sharp knife.
Depending on how you like your Rocky Road you can place more marshmallows or biscuits depending on your desired taste. You could also add jellys or cherries in there too if that's how you like your Rocky Road!
