CHRISTMAS SALAD | FRESH PEA, MINT, FETA SALAD

Delicious Fresh Pea Feta Mint Salad for Christmas Day

Tangy, Fresh & oh so cleansing. Munching away on this Green Pea salad feels good for the soul & light on the belly rather than the hefty weight we can often feel when we overindulge at this time of year! The mix of Tangy Feta, Fresh Mint, Crunchy Peas & a zesty lemon dressing... This Salad is the perfect accompiant to a Summer BBQ, Christmas Meat-festival and a good old go-to when you're feeling like you need to get some greens in you!

INGREDIENTS

  • 1.5 cups of freshly shelled Peas (approx 320g) 
  • 1 Cup of Snow Peas (The flat ones!) 
  • 100 gram washed baby spinach or Rocket leaves
  • 125 gram Crumbled Feta Cheese
  • 1/2 cup mint leaves, finely shredded
  • 2-3 Tablespoons of Olive Oil 
  • Juice from 1 Lemon
  • 1-2 cloves of Garlic, Chopped
  • Cracked Pepper
  • 1 teaspoon of Chilli oil / flakes
  • **Optional, Ciabatta Bread ripped into 3cm x 3cm cubes, lightly pan-fried in oil

Delicious Fresh Pea Feta Mint Salad for Christmas Day

METHOD

  1. Cook the Shelled peas in a pot of boiling water for 1 minute. Drain then plunge immediately into a large bowl of icy water.
  2. Chop the Snow Peas in 2-3cm parts
  3. Arrange The Spinach or Rocket leaves on a large platter
  4. Scatter both the Snow Peas and Shelled Peas over the top.
  5. Crumble feta over the peas.
  6. Sprinkle with shredded mint
  7. Make the dressing in a Jar (Oil, Lemon Juice, Garlic, Pepper & Chilli). Add Extra Olive Oil or Lemon depending on your taste buds. 
  8. Drizzle the Dressing over the salad & mix through lightly. 
  9. **Option to also add pan-fried and cubed ciabatta into the Salad
