Cabbage without Mayo. It's extremely hard to come by but when you find it, oooh weee life is good! If you're one of the 0.2% of the population who also hates Mayonnaise, welcome. If you're still a traditional slaw lover... Stick with me, this delicious, crunchy, fresh Cabbage Salad will have you second guessing how you'll next serve up your crunchy greens!
The colours & fresh texture of this salad will keep you coming back for me. It is the perfect accompiant to your Falafel, Vege Patties, Grilled Mushrooms or, BBQ'd meat.
INGREDIENTS
- 4 cups Finely Chopped green cabbage (Hot tip, use a Food Processor if you have one with the 'slicer' attachment!)
- 2 cups Finely Chopped red cabbage
- 1 cup Grated carrots
- 2 Spring onions, trimmed & finely chopped (You could also use Red onion)
- 1 red Pepper, cored and cut into thin sticks
- 3 radishes, halved and thinly sliced
- 1 cup chopped parsley
- ½ cup chopped fresh dill
- 1 teaspoon sumac
- Pink of Salt
- 1 cup toasted sliced almonds
DRESSING
- 3 Tbsp Sesame Oil
- 3 Tbsn Peanut Oil
- 3 Tbsn Rice Wine Vinegar
- 2 tsp light Soy Sauce
- 1/4 Cup Sweet Chilli Sauce (Or Honey + Chilli Oil)
- Salt & Pepper
Ready for the easiest, tastiest fresh Salad yet?
1. Mix all the dressing ingredients together.
2. In a large mixing bowl, combine the cabbage, carrots, onions, red bell pepper, radishes, parsley and dill. Season with salt. Add the sumac. Add the toasted almonds. Toss gently to combine.
3. Pour the dressing over the salad & let it marinate for 30 minutes. Season accordingly.
