As you know... We've got lemon's on our mind! On our search this week we stumbled upon these healthy, sweet little morsels and couldn't help but share them with you. Sweet yet tangy, and oh so healthy, these lemon bliss balls are a simple and nutritious treat designed to get you through a busy day. The best part? They’re made using only 7 ingredients and are vegan, gluten free, and refined sugar free . With all that in mind, what are you waiting for? Get the blender ready & it's time to whizz up these Lemon-y treats!
INGREDIENTS
- 1 cup Cashews
- 1 cup Shredded Coconut
- 6-7 Medjool Dates (Remove the stones!)
- 1-2 tbsp Maple Syrup /Rice Syrup
- Juice from 1-2 lemons (Depending on how big / juice they are)
- The Zest from 1 Lemon
- 1 tsp Vanilla
METHOD

Place all ingredients into a food processor or Magic Bullet. I use my Nutri bullet for all my bliss balls and it works a treat. (So easy to clean!)

Blend them until only a few small chunks remain. Be careful not to blend them into a complete mush...

Have a little taste and adjust the sweetness to your liking. Slightly more Lemon or Maple Syrup may do the trick...

Once that's nailed, transfer the blended mixture into a bowl and pop it in the fridge to set. (This makes it much easier to roll them into balls)

After 30 minutes or so, roll the mixture into little balls (around 1 Tablespoon).

If you're a coconut loved like me, roll the balls through shredded coconut and pop them in a container. They will last up to 2 weeks in the fridge or longer in the freezer!
**Feel free to add a scoop of your favourite protein powder / Hemp powder to increase the protein content... although the Cashews should have you covered!
I am a huge fan of Bliss Balls no matter the flavour or season. These lemon balls are a unique and tangy flavour, different to the usual date / cacao combo of Bliss balls.
