    My new Roots life changing loaf of bread full of nuts & seeds

    As much as I would love to take credit for this delicious morsel of goodness I'm about to share with you, I can not. This recipe was sent to me from a friend as I begun a journey of ridding Gluten from my life.... and this guy has been an absolute saviour! For when you CBF cooking, for when you just want 'toast' for dinner, for when you're fighting every craving for a hearty 'carb-a-liscious' meal when your GF and for when you just want to wake up and not eat cereal. Introducing to you, what has deemed to be named 'Life-Changing' Loaf.

    The sentiment behind this loaf is more than just attempting to eat less gluten, but to swap that out to add goodness into your daily meals. Bread & Toast seem to be such an quick & easy daily 'quick fix' for a meal but really, how many nutrients are we getting? (Apart from the delicious Almond butter we're lathering it with....)

    This Life-Changing Loaf is well, potentially about to change your life. Since I was introduced to this recipe, I have been making it weekly & even converted a couple of humans along the way. It's very filling (with all the good stuff!) so you only need 1 piece to keep you full (ok, sometimes 2 because who can stop when it tastes that good?)

    If you're up to experiment, looking for a Gluten-Free alternative to bread or are just slightly** bored while working from home... Give it a whirl and you too might be a convert!

     THE LIFE CHANGING LOAF OF BREAD via My New Roots

    • 1 Cup of Sunflower Seeds or 1/2 Sunflower & 1/2 Pumpkin
    • 1/2 Cup of Flax seeds (I use LSA too)
    • 1/2 Cup of Almonds of Hazelnuts
    • 1/2 Cups of Rolled Oats
    • 2 Tbsp. Chia Seeds
    • 4 Tbsp. Psyllium Husks (3 Tbsp. if you're using the powder)
    • 1 tsp. salt
    • 1 Tbsp. Maple Syrup (Stevia or nothing for a Sugar-free option)
    • 3 Tbsp. melted Coconut Oil or Ghee
    • 1 1/2 Cups of Water

    DIRECTIONS:

    1. Pre-heat the oven on to 175oC / 350oF
    2. Prepare a Silicon Loaf tin or oil a regular tin / glass Loaf tin
    3. Whisk the Coconut Oil, Maple Syrup and Water together in a Bowl. 
    4. Place all other dry ingredients into another bowl
    5. Mix together until the dough is completely mixed together and is sticky (You may need to add a little more water)
    6. Place the dough into the loaf tin and smooth the top (You could get creative here and decorate with more seeds!)
    7. Bake for 30-40 minutes in the middle of your oven rack
    8. Wallah! Slice away & Enjoy your nutty, toasty morsels of goodness.  

    You can store the loaf in a tin for up to 5 days. Also stores well in the freezer however I suggest you slice it BEFORE placing it into the freezer to ensure it maintains its shape.

    P.S. I have also tried adding different things into it such as Pesto, Sun-dried Tomatoes, Olives, various herbs which have all been winners!
