Creamy, chewy, healthy and yep you guessed it - DELICIOUS this Choc Cashew Slice is on high rotation in my freezer and a close runner up to my all-time-fave Snickers Slice that I shared earlier this month.
This Cashew based slice is so ridiculously easy to make, not to mention healthy, it's hard to pass up. I love having it on hand in the freezer for, well, myself but also a nice little treat when friends pop over.

INGREDIENTS (BASE):
1. Place the Cashews into a Blender (I do this all in my nutribullet) until they form a kind of paste. Stop every few seconds to scrape down the sides so they all get blended down and add a teaspoon of water if you need to.
2. Add all remaining ingredients into the blender and process until they are well mixed together.
3. Line a Baking dish (approx 20cm x 20cm) with Baking paper and press this mixture into the dish. Place in the freezer to set for 1 hour before making the topping...
INGREDIENTS (TOPPING)
1. Melt / mix the Coconut oil with the sweetener. Once combined, add the cocoa powder to create the 'chocolate'
2. Pour this over the base and leave to set for a few minutes before sprinkling the coconut flakes & sea salt on top.
3. Place back into the freezer for an hour to set before slicing it up and serving straight into your mouth!
**You could also add a layer of chopped nuts on top of the base before you sprinkled the chocolate if you wanted a little extra crunch. Alternatively, you could sprinkle with chopped nuts instead of coconut on top too!
This Chewy cashew slice is truly one of my faves and probably my most 'baked' slice to date. It literally takes seconds and tastes like it took hours! I would love t hear from you if you have tried this delicious morsel and what you think x
