Tangy, Fresh & oh so cleansing. Munching away on this Green Pea salad feels good for the soul & light on the belly rather than the hefty weight we can often feel when we overindulge at this time of year! The mix of Tangy Feta, Fresh Mint, Crunchy Peas & a zesty lemon dressing... This Salad is the perfect accompiant to a Summer BBQ, Christmas Meat-festival and a good old go-to when you're feeling like you need to get some greens in you!

1.5 cups of freshly shelled Peas (approx 320g)
1 Cup of Snow Peas (The flat ones!)
100 gram washed baby spinach or Rocket leaves
125 gram Crumbled Feta Cheese
1/2 cup mint leaves, finely shredded
2-3 Tablespoons of Olive Oil
Juice from 1 Lemon
1-2 cloves of Garlic, Chopped
1 teaspoon of Chilli oil / flakes
**Optional, Ciabatta Bread ripped into 3cm x 3cm cubes, lightly pan-fried in oil
Cook the Shelled peas in a pot of boiling water for 1 minute. Drain then plunge immediately into a large bowl of icy water.
Chop the Snow Peas in 2-3cm parts
Arrange The Spinach or Rocket leaves on a large platter
Scatter both the Snow Peas and Shelled Peas over the top.
Crumble feta over the peas.
Sprinkle with shredded mint
Make the dressing in a Jar (Oil, Lemon Juice, Garlic, Pepper & Chilli). Add Extra Olive Oil or Lemon depending on your taste buds.
Drizzle the Dressing over the salad & mix through lightly.
**Option to also add pan-fried and cubed ciabatta into the Salad
