These spiced nuts have been rolling around my families house at Christmas time ever since I can remember. Deliciously crunchy, mostly healthy and a moreish treat, these nuts make for great gifts as well as to have on hand around Christmas time when lots of friends and family pop in to visit. You can add more of each spice and less of others depending on your personal preference, but be sure to whip the egg whites to perfection! Without further ado, I introduce to you the Luna & Rose family Christmas Spiced Nut Recipe!
Christmas Spiced Nuts:
125gm of your favourite mixed nuts including Whole Blanched Almonds, Pecan Nuts, Cashew Nuts, walnuts and Brazil Nuts 1 Egg white 1/3 Cup of Sugar or sweetener alternative (Stevia etc) 1 and a 1/2 teaspoon of Cinnamon 1/2 teaspoon of ground ginger 1/2 teaspoon of Mixed Spice 60gm Butter
Place the nuts on a flat tray and bake in a moderate over for 5-10 minutes or until lightly roasted.
Place the roasted nuts inside a tin (approximately 28cm x 18cm)
Melt the butter
In a separate bowl, beat the egg white until a stiff peak forms
Gradually beat in the sugar, cinnamon, ginger and mixed spice
Stir in the melted butter through the eggwhites
Pour the mixture over the nuts and mix well.
Bake in a moderately slow over for 30 minutes, stirring the nuts every 5-10 minutes to break them up.
Once they have cooled, pop them in a jar and have on hand for when your pals come over for a drink!
These nuts make for awesome Gifts (Especially at Christmas time). I love making a big batch, heading to the op shop and picking up some old Jars and making cute fabric lids for them.
