ACE'S MOUTH WATERING SUMMER WATERMELON SALAD

To share in the celebration of 4th of July, USA Independence Day this week, we thought we would ask our Lunacita Alden (@aceatthebeach) what she gets up to on this special day. And so she shared with us a little 'Easter family favourite'. I'm not going to lie.... I am VERY excited to try this one myself! Here's what Alden had to share.

With 4th of July almost here, what better way is there to celebrate than with this refreshing and festive summer salad?

My personal favorite Independence Day recipe is a summer watermelon salad that my family loves to have for dinner! The red watermelon and white goat cheese makes it a great dish for all your 4th festivities!

Ace at the Beach Fresh Summer Watermelon Salad by La Luna Rose

SUMMER WATERMELON SALAD

What you’ll need:

  • Watermelon 
  • Mint leaves
  • Goat cheese 
  • Cucumber 
  • Pistachios 
  • Lime 
  • Arugula 
  • Sea salt or Black salt
  • Your favorite olive oil 
  • honey
  • lime 

One of the great parts of this recipe is being able to easily tweak it to whatever size you need it. So feel free to make a massive bowl of, or whip up a quick snack!

Fresh Watermelon Summer Salad with Cucumber and Feta

Here is how to make enough salad to serve four:

  1. Take half a watermelon then quarter it. This will make it easier to cut the fruit into cubes.
  2. Throw 4 handfuls of arugula in a bowl. 
  3. Toss in a handful or two (depending on preference) of pistachios. 
  4. Take the goat cheese and slice it into small bits and add into the bowl. 
  5. Toss the watermelon in the salad. 
  6. Squeeze half a lime into over the bowl. 
  7. Slice up one whole cucumber and add. 
  8. Toss a pinch or two of fresh mint into the mix. 
  9. In another small bowl mix two parts olive oil, one part honey, and a squeeze of a lime. Then a bit of salt and pepper for taste.
  10. Drizzle this over the salad
  11. Toss the salad, serve on a plate and sprinkle with black salt or pepper! Fresh Watermelon Salad with Cucumber and Feta. Delicious

This recipe is so refreshing and a guilt-free way to enjoy your July 4th weekend (but be sure you pair it with a delicious glass of rosè!!)
