I recently found this delicious recipe over on my friends blog 'Ashleigh Jade' and couldn't wait to try them. I'm a sucker for a good bliss ball and these Beetroot versions did not disappoint! They're healthy, look pretty spesh and totally more-ish. Get ready to get some super red hands & try this epic Bliss ball recipe out. (And head over here for more of Ash's delicious recipes).

Ingredients:
- 2 medium size beetroots (peeled, roughly chopped & steamed)
- 4 mejool dates
- 2 cups dessicated coconut & additional for rolling
- 70g your choice of protein powder (optional)
- 70g raw cacao powder
- 1 – 2 tbsp maple syrup
- Dash of cinnamon
Preparation:
- Place beetroot in bowl and blitz until finely chopped
- Scrape down sides and add dates. Blitz again
- Add remaining ingredients and mix until well combined
- Spoon out and roll into balls rolling each ball into any coating you choose – more protein powder or coconut
- Refrigerate and serve
Not such a big Beetroot fan but keen for the extra Iron & Zinc? Just use a little less and throw in an extra date / little more Cacao. These little morsels are delicious, healthy and totally more-ish. They're also perfect coming into the Christmas season as a little gift for your family & friends!
