     INGREDIENTS

    • Cracked Ice
    • 2 1/2 ounces London Dry Gin
    • 1/2 ounce Dry Vermouth, preferably
    • Green Olive for garnish

    METHOD

    1. In mixing glass or cocktail shaker filled with ice, combine gin and vermouth.
    2. Stir well, about 20 seconds, then strain into martini glass.
    3. Garnish with olive and serve.

    INGREDIENTS

    • 30ml Dry Gin
    • 120ml Tonic Water
    • 1 x Grapefruit wedge
    • 1 x Mint sprig
    • Ice

    METHOD

    1. Put the mint leaves into a tall glass, reserving a small sprig to decorate.
    2. Use a muddler to lightly bash the leaves until they are broken up and smelling highly minty.
    3. Fill the glass to the top with ice cubes.
    4. Pour in the rest of the ingredients except the sparkling or soda water and stir.
    5. Top up to taste with sparkling or soda water and decorate with the reserved sprig of mint.

    INGREDIENTS

    • 2 Lime Wedges, for garnish
    • 1/4 c. Kosher Salt or coarse Sea Salt, for rim
    • 4 oz. Tequila
    • 2 oz. Triple Sec
    • 1 1/2 oz. freshly squeezed Lime juice
    • Ice

    METHOD

    1. Place salt on small shallow plate.
    2. Rim two glasses with lime wedge, then dip in salt to coat rim.
    3. Divide tequila, triple sec, and lime juice between 2 glasses and stir to combine.
    4. Top with ice, garnish with lime, and serve.

    INGREDIENTS

    • 1 1/2 ounces Vanilla Vodka
    • 1 ounce Coconut Rum
    • 1/2 ounce Cream of Coconut
    • Splash of Pineapple juice
    • Ice

    METHOD

    1. Pour the ingredients into a cocktail shaker filled with ice.
    2. Shake well. Strain into a chilled cocktail glass.
    3. Garnish with a pineapple wedge and/or coconut flakes.

    INGREDIENTS

    • 1–750mL bottle Rose Wine
    • 8 large Strawberries
    • 1 tablespoon Honey
    • Lime to Garnish

    METHOD

    1. Pour 2/3 cup Rose into a glass measuring cup; set aside for when serving.
    2. Remove the tops of the strawberries and cut them in half.
    3. In a blender, blend the remaining rose, strawberries, and honey until smooth.
    4. Pour the mixture through a strainer and into a covered baking dish.
    5. Freeze at least 6 hours, or overnight.
    6. Blend the mixture again until it comes to a fluffy texture.
    7. To serve, place the blended mixture into a glass. Then pour a splash of rose into each glass (this step is important: it gives the final texture and brings in the character of the rose).
    8. If desired, garnish with strawberries and lime to serve.

    INGREDIENTS

    • 2 ounces Tequila
    • 4 ounces Orange Juice
    • 1/2 ounce Grenadine
    • Orange slice to Garnish
    • Maraschino Cherry to Garnish
    • Ice

    METHOD

    1. Pour the tequila and the orange juice into a highball glass filled with ice cubes. Stir.
    2. Slowly pour the grenadine around the inside edge of the glass. It will sink and gradually rise to mix with the other ingredients.
    3. Garnish with an orange slice and cherry.

    INGREDIENTS

    • 1 1/2 cups Ice
    • 1/2 cup diced Pineapple, frozen
    • 2 ounces Pineapple juice
    • 2 ounces Coco Lopez Coconut Cream
    • 1 1/2 ounces White Rum
    • 1 ounce Dark Rum Pineapple slices

    METHOD

    1. Put the ice, frozen pineapple, juice, coconut cream, and the white and dark rums into a blender.
    2. Blend until smooth and frosty.
    3. Pour the drink into 2 glasses and garnish the rim with pineapple slices.
    INGREDIENTS
    • 1 bottle of chilled Prosecco
    • 1 bottle of Aperol Soda, served from a syphon or chilled bottle
    • Ice Cubes
    • Slices of Orange

    METHOD

    1. Fill tall balloon or wine glasses generously with cubed ice.
    2. Combine Prosecco followed by Aperol in equal parts.
    3. Add a splash of soda.
    4. Garnish with a slice of orange – and an olive on a stick, if you’re doing it the way they serve it in Venice!

    INGREDIENTS
    • 1 oz / 30ml fresh Lemon juice
    • 1 tsp / 4g Sugar, preferably superfine
    • 2 oz / 60ml Gin
    • 1 Egg White
    • Club Soda to top-up
    • Lemon wedge for Garnish
    • Ice

    METHOD

    1. Pour gin, juice, sugar, and egg white into a cocktail shaker filled with ice.
    2. Shake vigorously. More than usual if using an egg white.
    3. Strain into a chilled highball glass with ice cubes.
    4. Top it off with soda water.
    5. Garnish with lemon slice and sprig of thyme if you’d like.

     

    INGREDIENTS
    • 30ml Dry Gin
    • 120ml Tonic Water
    • 1 x Grapefruit wedge
    • 1 x Mint Sprig
    • Ice

    METHOD

    1. Fill a stemmed glass with ice.
    2. Add 30ml Gin. Top with tonic water & stir.
    3. Gently squeeze grapefruit wedge into the glass before dropping it in.
    4. Garnish with a sprig of mint.
