This recipe has been lurking around my family BBQ tables since I can remember. It started out as 'Mum's weird Brown Rice thing' back before Brown Rice was... trending (Is it trending?!) and I looked at it like most 80's kids did to anything that looked remotely colourful but NOW? Well, this delicious Brown Rice Salad is my absolute Go-To. I can't go to a BBQ or party without it and I never ever leave without sharing the recipe with at least one eager customer...
So without further ado, I hereby introduce you to your new favourite Brown Rice Recipe. It's hearty, delicious, loved by all and is the perfect accompaniment to a side of Falafel, Grilled Veges or your preferred meat. It's also extremely easy which, lets be real, is probably the most important factor!
INGREDIENTS
1 cup uncooked brown rice
1 ¾ cups water
¼ cup light soy sauce (Or Tamari if you are GF)
½ medium sized onion finely chopped
3 spring onions finely chopped
1 red pepper chopped into tiny cubes
½ cup sultanas (optional)
½ cup roasted peanuts coarsely chopped
1/2 cup each roasted sunflower, pumpkin and sesame seeds
METHOD TO THE MADNESS
Place the Brown rice and unsalted water in a tightly covered pot and simmer for 45 minutes (watch as this sometimes cooks very quickly) until rice is tender and all water has all been absorbed.
Once cooked, add the soy sauce and finely chopped brown onion to the hot cooked rice and mix well. Leave for at least 2 hours for the flavours to soak in or overnight if you have the time.
After this standing time, add the remaining ingredients into the Brown Rice.
Create the Below Dressing:
DRESSING
¼ cup olive oil
2 Tablespoons lemon juice
1 teaspoon grated lemon rind
1 Fresh clove garlic crushed
1 teaspoon grated fresh root ginger
1 teaspoon sugar or honey
Combine all ingredients and process them until smooth using a food processor or shake well in a screw top jar.
Toss the dressing through the Brown Rice, place in your favourite serving bowl & you're set to amaze! Best served under the sunshine with some sparkles in hand.
