ANZAC BLISS BALLS FROM @COCONUTANDBLISS

A delicious take on the old Kiwi / Australian favourite, the 'ANZAC biscuits', Sophie Fisher from @coconutandbliss blog has shared her Anzac favourite recipe with us. If you're reading this and thinking WTF are ANZAC biscuits (Ie. You're not from New Zealand or Australia!) let me tell you here and now, you have been missing out you're entire life my friends!

30 second Anzac cookie history lesson:
Dating back to war days, ANZAC biscuits were 'invented' and made by loving wives and mothers who sent their husbands and boys off to war. Because there were no eggs or perishables in these cookies, they would last the time and distance that allowed the men (and some women Nurses) to take with them across the globe as a little treat and slice of home (and to keep them full!). The oats were filling and long lasting while the caramelisation of butter & sugar made them way too morish. The name though? Well that comes from the shorthand thatAustralian and New Zealand Army Corps got while abroad standing for exactly that. These days there are many versions of a good ANZAC cookie including a couple of delicious versions in local Kiwi / Australian supermarkets. Some chewy, some crispy, some thin, some chunky... either way, Anzac cookies are by far one of my favourite all-times. 
The below recipe was shared with us from Sophie of @coconutandbliss who continues to fill our feed with morish, epic, tasty little treats and this one doesn't fail! Coconut and Bliss Anzac Cookie Balls
These ANZAC cookie balls are super easy & can be kept in an airtight container in the fridge for weeks. 
So go on, 
  • 1 1/2 cups rolled oats
  • 1 cup desiccated coconut
  • 1/2 cup almond butter
  • 2 tbsp pure maple syrup
  • 3 tbsp honey
  • 1 tsp sea salt 
  • 1 tsp vanilla extract

Blend all ingredients together in a high-power blender. Add a dash of hot water if the mixture is too dry. Roll into balls and refrigerate until hard. 
YUM.
